Recipes

Butter chicken

Ingredients:

1. Whole chicken, chopped into small pieces
2. 2 tomatoes pureed
3. 2 onions, chopped
4. 1tsp ginger-garlic paste
5. 10 cashewnuts ground to paste
6. 1 1/2 tsp butter
7. 3tsp cream
8. 1tsp chilli powder
9. oil for frying
10. Salt to taste

For the marinade:

1. 1tsp tandoori masala
2. 1/2tsp garam masala
3. 2tsp lime juice
4. 1/2tsp jeera
5. 5tsp curd

Method:

Marinade the chicken in the marinade for an hour. Heat oil in a non-stick pan and fry the chicken for 10mins. Remove the chicken and keep it aside. In the remaining oil fry the chopped onions till it turns golden brown, then add the ginger-garlic paste and fry till the oil separates. Add the cashew paste, chilli powder, tomato paste and cook for 10mins. Add the butter and the cream and stir. Now add chicken. Mix well and cook till done. Garnish with coriander. Serve hot.


Chicken stew

Ingredients:

1. 4 chicken legs or thighs
2. 2tbsp olive oil
3. 2tbsp butter
4. 2 onions chopped
5. 6-8 crushed garlic
6. 200gms chopped mushroom
7. tomato puree

Method:

Heat olive oil and butter in a large pan. Season the chicken pieces with salt and pepper and fry it. Remove and keep it aside. Melt some more butter and fry the onions till it turns gloden brown. Add crushed garlic and mushroom. After few mins add tomato puree. Cook it for 5mins. Add the chicken in to it and close the pan and cook it for 10mins. garnish with coriander leaves and serve it.


Chicken fry

Ingredients:

1. Chicken
2. Cloves garlic, crushed
3. Sliced ginger
4. Spring onion
5. Asparagus
6. Soya sauce to taste
7. Water
8. Salt to taste

Method:

Heat the pan. Add oil and heat till hot but not smoking. Add crushed garlic, ginger, salt and sliced chicken.
Cook the chicken till no longer pink. Then add the sliced spring onions and asparagus. Mix in soya sauce and water.
Cover and simmer for a few minutes. Then serve it hot.


Grilled chicken panini

Ingredients:

1. 4 chicken breast (boneless)
2. 8 slices bread
3. 3tsp olive oil
4. 2 tsp fresh rosemary
5. Cheese
6. 1/2tsp garlic paste
7. 1/4tsp black pepper powder
8. 1 tomato sliced
9. Salt to taste

Method:

Set the grill to a medium-high temperature. Mix the rosemary, garlic paste, salt and pepper powder together. Brush the chicken with olive oil and add the seasoning to it. Grease the grill grate with little oil and cook the chicken for about 7mins. Wait for the juice to get clear and for the chicken to be well cooked before you remove it from the grill. Allow it to cool for 5-10mins. Slice chicken into pieces. Place the tomato, cheese and chicken on the bread. Brush with olive oil and grill till the cheese melts. Serve hot.
